If you talk to D.J. Colby, owner of Wilton Creamery, about his vegan ice cream, he sounds a little bit like Willy Wonka. But unlike the gum that Wonka hadn’t quite worked out yet, Colby has his vegan ice cream perfected – and it tastes just like ice cream made with dairy products.

“It took me seven months to get it right, but it’s right now.”

And there are 373 more flavors where that came from, including Pecan Praline Dulce, Sea Salt Caramel, Sweet Cinnamon, Strong Coffee, Triple Rum Raisin, Snickers Adjacent, Christopher Loves Chocolate and, most popular, He’s Not Worth It, a name chosen by Colby’s customers on Facebook.

All of them are unique to Colby’s own recipe book. “They’re all our recipes. It’s between gelato and ice cream, and it’s not too sweet.” Colby also makes temporary flavors in small batches of 2.5 gallons, sometimes using food from other restaurants. Recently, he used red velvet cupcakes from Humpy’s Pizza.

It’s that uniqueness that keeps Kimber White coming back for more.

“I think they have unique flavors and they are locally owned. The best part is they have doggy ice cream and love our pets.” In July, Wilton Creamery was also named the most popular ice cream shop in Florida by “BuzzFeed.”
